Tomatoes

My 6 tomato plants have happily been spewing out fruit at a regular interval. Unfortunately the birds will not allow the fruit to ripen on the vine. The winged bandits eat any thing that is remotely red and have even eaten some green fruit. This is most disappointing because vine-ripened tomatoes are so sweet. I have to harvest while they are greenish-red and let them ripen on my counter.

My kids do not like raw tomatoes. At all. They love the products of tomatoes: ketchup, pasta sauce, salsa. But they don’t like tomatoes in salads or in sandwiches (well, they don’t like sandwiches in any form.) This gave me an opportunity to page around in my cookbooks and found one in Plenty.

Daughter ate the dinner without squawking, I didn’t bother to even serve it to Son. I rated this as a 4. Subtle flavors, good texture. Yummy.

Even with the birds eating a chunk of the harvest, I still have dozens of these red orbs at any given time to work with. Not sure what the best approach will be to eating so many. I predict some being juiced and mixed with vodka.
